A Tribute to Small Food

I just watched Bill Buford on Charlie Rose.

He talked about the concept of small food vs. big food. Small food is prepared by hand by small producers. Big food is mass-produced in huge factories.

Bill thinks small food just tastes better.

While in Italy, he learned that the most important ingredient when making pasta is the egg. When the local chicken farmer was closed, he was forced to buy supermarket eggs. And the pasta was awful.

I couldn’t agree more. It’s like tea bags at the supermarket vs. hand-made whole leaf tea from a small family-owned and operated tea estate. I guess the secret ingredient is a passion for great food (or drink).

Here’s to small food. And small tea.
